I am going to share with you all a simple recipe for those who are lactose intolerant and those who want to switch to plant-based products, instead of relying on dairy products.

Homemade Chia Seed Soy Yogurt

Ingredients : -
500ml water
8 tbsp of Unsweetened Organic Soy Milk Powder
3 tbsp plain yogurt
2 tbsp chia seeds
1 tbsp honey
Grapes (You may use any fruits you like)
Mixed Nuts

Method : -
  1. Add soy milk powder into water and mix well. Simmer the soy milk on medium heat to right below boiling point. Stir the soy milk gently as it heats. This heating step helps to change the protein structure in the soy milk so it sets as a solid instead of separating.
  2. Let the milk cool until it is just warm to the touch. Stir occasionally to prevent a skin from forming.
  3. Add yogurt into the soy milk and stir gently.
  4. Pour mixture into glass bottles.
  5. Ferment using Auto Menus No.8 (yogurt). It takes around 7 hours for fermentation to happen.
  6. Remove the yogurt when ready and stir in the chia seeds.
  7. Cool the yogurt and cover them up. Refrigerate overnight.
  8. Serve cold with grapes and sprinkled the top with mixed nuts.
